½ lb butter or non-dairy margarine 1 lb/16 oz confectioners (icing) sugar 1 c/8 oz coconut (best not to substitute) Nonuttin’ cherry fruit chips Graham crumbs (gluten free try Josef cinnamon brand, crushed)
Mix together butter/mar., confectioner’s sugar and coconut. Form into small balls around cherry chips (6-8 per ball) Roll each ball in graham cracker crumbs and chill.
*Can be frozen.
